Team GFP

by Jay

There are so many amazing bloggers and experts out there, and I want you to know about them all! The best way I can accomplish this is to have them write a post so that you can see their style, content, and blog focus. Be sure to let these wonderful writers know how great of a job they do and hopefully you will see more of them on GFP in the future!

Gluten Free Post Creator:

In case you don’t already know me, I am Jay Thurston, the creator of Gluten Free Post (GFP). I was diagnosed with Celiac Disease in 1994 after a long stay in the Intensive Care Unit. The struggle to find gluten-free foods was quite difficult back then, and the knowledge that the general public and medical community had about Celiac was very poor.
Today things are different, we have major label companies making GF products, news media covers the issues, and it seems everyone you talk to knows someone who has Celiac Disease. My goal is to continue to educate the community and help my fellow Celiacs with choosing the best GF foods out there!
I have two amazing boys and a wonderful wife. We live in New Albany, Ohio (Columbus suburb) and by trade I am an Information Technology Auditor.

My name is Elle Hermansen, and I’ve known about my gluten intolerance for 5 years. I’m 23 years young and I live in Stavanger, Norway at the moment. I’m born and raised in Ontario, Canada though – and I’m headed back there soon.

Food-wise, I particularly enjoy Thai and Vietnamese Cuisine, although gluten-free pizza and tacos are favorites as well. I’m a tea connoisseur of note.

I’m a singer/songwriter; wrote my first notes at the age of 4 and have been rocking out ever since. I might be a baby to the blog world, but I’m an old soul. I have a love for clothing, design – and animals!

AmyGreen

Amy Green, 33 year-old blogger and passionate home cook, has been living sugar and gluten-free for nearly six years. After a life-long struggle with weight, she learned that her body has an abnormal reaction to sugar and gluten that causes intense food cravings. Her diet change has resulted in a long-term weight-loss of over 60 pounds.
Determined to create satisfying, sugar & gluten-free meals for her husband and food she can serve to anyone, Amy is usually in the kitchen, working on another sugar-free, gluten-free recipe. Though she cooks everything from biscuits to cakes and pasta to roasts, her favorite thing to make is homemade ice cream. She loves to find ways to put the flavors of great food you wouldn’t expect to find in a creamy, frozen form. When not in the kitchen, she’s writing about what she cooks on her blog Simply Sugar & Gluten Free. Amy lives in Dallas with her husband, Joe, and their 4 dogs.

I’m a health nut and health writer. Sort of by accident. Well, I’ve always
been a writer (or, a “writer”) for as long as i can remember — even since
childhood. The “by accident” part is because after never really feeling
well, or healthy, my whole little life, I finally was diagnosed in 2007 with
Hashimoto’s Thyroiditis, which is an autoimmune disease. Basically this is
just a fancy way of saying my body is attacking my body; specifically, my
thyroid gland. Also basically, it was hell.

I finally got sick enough of being sick to do something about it. I read,
read, and read and realized our gut and what we eat dictate our whole minds
and bodies and immune systems. My health writing is an offshoot of all of
this and is very important to me because too many people are sick. And the
really bad part is, you don’t always die.

But the really good part is, my disease is in remission. You only call it
“cured” if you’re an optimist. Which I’m not.

I also am a Gluten-Free guide on Examiner.com for the Tampa Bay
Area,
as well as the resident GreenGirl for hangPROUD.com ,
and a columnist for DearThyroid.org .
